It doesn’t get much easier than cooking with foil packs, and this barbecue chicken is sure to be a hit among every member of your family. Ingredients
- 4 sheets of heavy duty tin foil to prevent leakage
- 4 boneless skinless chicken breasts
- 2 cups of barbecue sauce
- 2 cups of pineapple tidbits
- 1 red bell pepper
- 1 small red onion
- freshly chopped cilantro for garnish
Instructions:
- Preheat your gill.
- Prepare your chicken, peppers, and onion. Cut the chicken into one inch pieces and dice the pepper and onion. Be sure to remove the seeds of the pepper.
- Arrange the 4 sheets of tin foil on a flat surface.
- In a large bowl, toss the chicken with the barbecue sauce until fully coated.
- Divide the chicken evenly among the 4 sheets of foil. Be sure to place the chicken in the center of the foil.
- Divide the pineapple, bell pepper, and red onion evenly over the chicken.
- Bring up 2 sides of foil over the chicken so the edges meet and seal the edges. This should make a tight 1/2-inch fold. Allow space for some expansion, then fold the other sides to seal.
- Place the packets on the grill, close the lid, and let cook for 10 minutes.
- Turn the packs over and cook for another 10 to 15 minutes, or until the chicken is 165 degrees F.
- Remove from the grill, let cool for 5 to 10 minutes, garnish with fresh cilantro, and enjoy!
